Lemons are the fruits form from spherical to oblong, often with a knob at and pointed at the other end. Normally the peel, which can reach 40% of the total weight, is yellow and is rich in essential oils, and can be more or less thin from very rough to smooth, more or less lined inside with a mass of white spongy said albedo. The pulp is divided into segments 8:00 to 10:00, it is generally very rough and juicy. The juice is up to 50% of its weight and contains 50-80 grams / liter of citric acid, which gives it the characteristic sour taste and several other organic acids such as ascorbic acid. A 3 % are from the seeds but many varieties do not.
